Suddenly, it seemed food insecurity and food banks were on everyone's mind. The shape of my story also changed. The emphasis had been on funding, but a picture of increased demand came into focus. Patterns changed within a matter of weeks, then days.
As I write this, the situation with SNAP benefits still feels uncertain. And around the county, demand for food banks is on the rise.
I visited food banks in Bellingham, Ferndale, Blaine, Everson, Maple Falls and Western Washington University. I also spoke to Agape Food Bank, which serves Spanish speakers in Whatcom. These interviews took place over the course of a month, with many follow-up emails exchanged as October went on.
